Something I often use Inkscape for is an intermediate step in making something else, since it's a lossless and object-y application. Examples: if I'm making an image that's a patchwork of many individual images, I'll import them into inkscape to scale, align, and arrange. I've used it to put a bunch of images together on a page for efficient printing. I've also used it to trace and then losslessly scale logos and things. I do a bit of original stuff in it too, like my business cards.
